Meatloaf, Meatloaf, Double Beatloaf

Every time I make this it reminds me of the movie 'A Christmas Story'. I end up pushing it into the pans and saying under my breath one of Ralphie's lines, "Meatloaf, meatloaf, double beatloaf..."

I just hope my children never learn to eat like a 'piggy'.


• 1 Beaten Egg

• ½ cup seasoned stuffing mix or breadcrumbs
(Herb or Italian tastes best)

• 1/3 cup milk

• 2 T onion/onion garlic soup mix

• ¼ cup + 2 T Stubbs Original BBQ Sauce

• 1 to 1¼ lb. Ground Beef


Directions:
Mix 2 T Stubbs, egg, stuffing or breadcrumbs, milk, onion soup mix, and hamburger.
Mix well.
Place mixture into ungreased bread loaf pan. Bake 50 to 60 minutes @ 350ยบ till no longer pink.
Spoon remaining ¼ cup Stubbs over meatloaf before serving.

Microwave Caramel Corn

You can make caramel corn in the microwave. Here's how:

1/2 cup brown sugar, packed
2 Tb light corn syrup
2 Tb unsalted butter
1/2 tsp vanilla
1/4 tsp baking soda
1 bag microwave popcorn, popped (I prefer Pop Weaver Butter Light or Pop
Secret Homestyle)
1 cup unsalted roasted peanuts (opt.)

In a 2-cup Pyrex measuring cup, place brown sugar, corn syrup, butter and
vanilla. Microwave on high for 1 minute. Stir mixture and microwave for
one minute more. Add backing soda and stir well; mixture will begin to foam
up and expand. Immediately, in a large bowl, layer popped corn, peanuts (if
desired) and caramel sauce. Stir lightly to coat. Eat right away or
transfer caramel corn to a wax paper covered baking sheet to cool. Store
caramel corn in an airtight container until ready to serve.

Mrs. Martins Fabulous Mayo

June 5, 1967

This is from an old recipe that comes from a Mrs. Martin. I have no idea who she is but my mom had this forever.


6 eggs beaten

½ cup vinegar

½ cup water

2/3 cup sugar

Chunk of butter (I don't know what the exact measurement is here??)

salt and pepper


Cook only until eggs are set, refrigerate. Great on tomatoes and as a salad dressing.

Spiced Tea

Spiced Tea

Boil 5 min.:

1 qt. Water

2 C. sugar

Stick cinnamon

Whole cloves

Then add:

2 C. orange juice

2 C. pineapple juice

1 qt. Brewed tea

Serve hot.

Dump Cake

DUMP CAKE


CAKE MIX ANY FLAVOR (CHOCOLATE IS THE BEST I USED ONE WITH CHOCOLATE CHIPS IN THE MIX)

2 EGGS

1 STICK OF BUTTER OR MARGARINE MELTED

1 tsp VANILLA

MIX TOGETHER AND PAT INTO CAKE PAN



BEAT TOGETHER

8 OZ CREAM CHEESE

1 BOX POWDERED SUGAR

1 tsp VANILLA

2 EGGS

POUR ON TOP OF CAKE MIX AND BAKE AT 350° FOR 35 TO 40 MIN.




I have been making it in 2 cake pans one large and one smaller

Then I use 12 oz of cream cheese and 1 1/2 pounds of powdered sugar.

For chocolate cake mix I use vanilla and almond flavoring.
