Microwave Caramel Corn
You can make caramel corn in the microwave. Here's how:
1/2 cup brown sugar, packed
2 Tb light corn syrup
2 Tb unsalted butter
1/2 tsp vanilla
1/4 tsp baking soda
1 bag microwave popcorn, popped (I prefer Pop Weaver Butter Light or Pop
Secret Homestyle)
1 cup unsalted roasted peanuts (opt.)
In a 2-cup Pyrex measuring cup, place brown sugar, corn syrup, butter and
vanilla. Microwave on high for 1 minute. Stir mixture and microwave for
one minute more. Add backing soda and stir well; mixture will begin to foam
up and expand. Immediately, in a large bowl, layer popped corn, peanuts (if
desired) and caramel sauce. Stir lightly to coat. Eat right away or
transfer caramel corn to a wax paper covered baking sheet to cool. Store
caramel corn in an airtight container until ready to serve.
